Patrick Wert works in the world of restaurant beverage strategy and operations. He is the founder of Innovative Beverage Strategies, a company that supports restaurants in improving beverage revenue and profitability through fractional beverage management services. The goal is simple: to help operators run stronger, more sustainable beverage programs—without the need for a full-time beverage director.
Patrick started the company in 2023 after spending over a decade working in a range of restaurants on the East Coast. During that time, he held various roles across front- and back-of-house operations, helping open new concepts, manage beverage programs, and better understand how beverage functions within different types of hospitality businesses.

His first book will be published in late 2025. It’s a practical guide for restaurant owners and managers looking to bring more structure and clarity to their beverage programs.

Outside of the company, Patrick works with a small number of individuals and businesses on private cellar organization and wine collection planning.

In 2025, he and his family moved back to Oklahoma City to be closer to home. He lives there with his wife, daughter, and two rescue dogs.
